Dr Callcott has extensive academic teaching experience at both undergraduate and postgraduate level in biological sciences, medical sciences, and veterinary science fields. Her scholarship of teaching includes the use of veterinary clinical simulation models in surgical and ultrasound diagnostic techniques and their impact on achieving student learning outcomes and clinical competency.

Dr Callcott’s teaching practices significantly focusses on students developing in-depth foundational knowledge in fundamental scientific principles and applying their knowledge to clinical-based situations with the aim to develop clinically competent industry-ready graduates proficient in day-one skills and attributes.

Her current teaching includes advanced veterinary medical nursing, clinical pathology, and applied pharmacology.

Dr Callcott has extensive research experience in both veterinary and human medicine with a keen interest in medicinal biochemistry and biodiscovery. Her work focusses on the therapeutic potential of natural bioactive compounds in reducing risk factors associated with lifestyle and metabolic diseases. Her work involves the use of laboratory-based methods in addition to conducting animal and nationally registered human clinical trials to investigate the feasibility and efficacy of natural bioactive compounds to develop nutraceutical products and functional foods.

Dr Callcott has an established publication record in peer-reviewed journals and has supervised the successful completion of Honours students graduated under her supervision and is currently supervising Honours and PhD students on current projects.
