Professor Hernandez-Jover has over fifteen years of academic teaching experience in the field of veterinary epidemiology and public health at both undergraduate and post-graduate levels. She completed the CSU Graduate Certificate in Teaching and Learning in Higher Education in 2016. Prof Hernandez-Jover teaches epidemiology, biosecurity and public health to veterinary science students and also contributes to teaching into the animal science degree. Her postgraduate teaching includes supervision of MPh and PhD students. Since joining CSU, she has supervised over 30 honours students, and over ten completed postgraduate candidatures. Prof Hernandez-Jover has also contributed to the development of veterinary epidemiology training programs for Australian government agencies and south-east Asian countries. She serves as examiner for the Epidemiology Chapter of the Australian and New Zealand College of Veterinary Scientists.

Professor Hernandez-Jover research interests include biosecurity, disease surveillance and epidemiology and social science methods applied to infectious animal diseases and public health. Since moving to Australia in 2005, she has worked collaboratively with industry and government stakeholders, other research institutions and CSU researchers conducting transdisciplinary research addressing national and international biosecurity priorities that directly impact livestock industries and communities. She has published over 95 research articles in peer-reviewed scientific journals and has attracted over $8M external research funds. In 2021, she was awarded the Most Productive Female Researcher Award in the Faculty of Science and Health. Prof Hernandez-Jover is an Associate Editor of the Veterinary Humanities and Social Sciences and the Veterinary Epidemiology sections of the Frontiers in Veterinary Sciences journal.
